Message Throttle response could be an issue, just like using a large bore 4 barrel carb has a worse throttle response than 2 smaller 4 barrels that have the same overall flow rate. ie, 1200cfm dominator has horrid throttle response when compared to either 2 600 cfm Holleys or 3 400cfm 2 barrel carbs. Overall same flow rate, but huge differences in throttle response.

The reason a 1200cfm dominator is ok for drag racing is throttle response is not a huge issue, you get on it and 10-11 seconds later you get off.

You would rarely see a dominator on a road track car, you'd be much more likely to see the 3x2 setup. Where the center 2 barrels do all of the work in the stop and go turns and the 2 secondary carbs only open up on the straights.

Either way, since these cars are injected, it should have even less effect.
